Gluten-Free Blueberry Oatmeal Muffins

  • 1 cup of gluten-free flour
    (I used Pillsbury Gluten-Free All-Purpose Flour)
  • 1 1/2 cups of gluten-free quick oats oatmeal
  • 1/2 cup of organic cane sugar
  • 1 tablespoon of baking powder
    (I used Bob’s Red Mill Gluten-Free & Aluminum Free Baking Soda)
  • 1/4 teaspoon of salt
  • 1 egg
  • 1 cup of unsweetened almond milk or coconut milk
  • 2 tablespoons of olive oil
  • 2 1/2 teaspoons of organic vanilla extract
  • 1 cup of Fresh Blueberries

*Optional – keep cane sugar out for topping 


  1. Preheat oven to 400 degrees
  2. Grease muffin tin with olive oil or use a nonstick muffin tin
  3. Combine all dry ingredients and set aside
  4. In a large separate bowl, combine all wet ingredients
  5. Add dry ingredients to wet ingredients and stir until all ingredients are combined
  6. GENTLY fold in the fresh blueberries
  7. Fill muffin tin with batter – should fill all 12 muffins cups perfectly about 3/4 of the way full.
  8. *optional* Sprinkle 1/4-1/2 teaspoon of cane sugar on top of EACH muffin for delicious crunchy sugar topping! 
  9. Bake for 20 minutes
  10. Let cool & enjoy!



Why Artisan-Made Products Are Better

Have you found yourself at the store lately searching for products that aren’t full of all the harmful chemicals and crap, and are just not having any luck?  Yeah, me too!  That being said, you DO see a lot of products labeled as ‘green friendly’ or even ‘organic’ – but sadly, a lot of that is just marketing tactics and not very honest. Sorry if that sounded so much like a commercial lol, but it’s true!

So, what the heck is ‘artisan’ and what is all the hype about? It’s defined as a person or company that makes a high-quality, distinctive product in small quantities, usually by hand and uses traditional methods (without all the crazy harmful perseverates like the stuff you buy in the store now). Before I started my business, ExplorBoxes, I was finding myself at Target searching up and down the aisles for items made without all the crap chemicals that NOBODY can even pronounce, and I was struggling! I know the stores are now becoming more “conscious” of harmful preservatives and focusing more on the vegan lifestyle and non-GMO products, but some of it cannot be trusted.

A label that says ‘made with organic ingredients’ can be used when a product contains at least 70% organic ingredients but is not accompanied by the official USDA Organic seal. Because of this, I started to realize that big box stores (such as Target and Walmart) are slowly becoming full of products that claim to be organic but aren’t 100%.

Recently, I started searching on Etsy and other websites for products that are handmade and TRULY organic/eco-friendly. I started coming across so many small artisanal businesses that make AMAZING body & beauty products that it made me think… “Ugh, why can’t I find more of this in the big box stores?!”. That’s when it dawned on me and I started thinking of ways to get these businesses more exposure. 

I have done quite a bit of research and have learned that most all homemade products sold by artisan businesses are preservative free. This is why getting products from them is beneficial because they do not require the preservatives since they are made fresh and are used within a short period of time. But, sometimes the use of preservatives is necessary to ensure quality products and to prevent bacterial growth and skin infections. If they are required, those businesses I’ve come across during my search use natural preservatives, such as grapefruit seed extract or antioxidants, because they want the same benefits as you – safe and healthy.

It is hard to find products that are good for us and the environment these days, and I’ve learned that most products on the shelves don’t list the ingredients! The FDA – which ensures the safety of things we put on our bodies, does not cover the products we clean with. ISSA – which regulates the labeling and registration of chemical cleaning products, does not require companies to list the ingredients on their packaging. The only ingredients they are required to list are chemicals that can “cause concern for our health”. That also means companies are not required to test the cleaning products.

My Favorite Scent

I am absolutely in love with the Green Tea & Lime product line. The hand soap leaves your hands soft and clean feeling. The multi-purpose cleaner gets the job done while making the places smell great.

I bought a set which included the multi-surface cleaner, laundry detergent, dish soap, hand soap and stain remover. The laundry detergent is Free & Clear which is nice for those who may have allergies or sensitive skin and it works well! A 25 oz. bottle will wash up to 96 loads of laundry because it is concentrated and you only use a pump or two. I personally use this detergent with Method Ginger & Mango fabric softener from Target.

The Lavender & Vanilla hand soap that came in the kit smells good, but it kind of reminds me of a hospital soap. I still prefer the Green Tea & Lime overall.
